Tajwański Wuyi Oolong

Classification and Origin

Category: Tajwańskie oolongi dziedziczne (heritage). Niektóre źródła zaliczają je do podgrupy hongshui oolong (紅水烏龍).

Coordinates: ~23°51' N, ~120°40' E.

Origin: Tajwan, powiat Nantou (南投縣), region Mingjian (名間鄉). Plantacje na południowo-wschodnich stokach pasma Bagua (八卦山脈), 250–400 m n.p.m.

Type: Oolong, średni stopień oksydacji (15–50%). Ciemne oolongi (濃香型, nóng xiāng xíng) o średnim i mocnym prażeniu.

Terroir

Altitude: 250–400 m (niskogórze – wysoka wydajność, ale wymaga mistrzowskiej obróbki dla głębi smaku).

Climate: Subtropikalny monsunowy, ~21°C średnia roczna, ~2000 mm opadów. Poranne mgły. Dzienne amplitudy temperatur 8–12°C.

Soil: Czerwone ziemie (紅土) typu laterytowego o wysokiej zawartości Fe₂O₃, pH 5,0–5,5. Podwyższona zawartość manganu (~150 mg/100 g) – geologiczna osobliwość Mingjian.

Mingjian – największe zagęszczenie gospodarstw herbacianych na Tajwanie; plantacje herbaty zajmują ponad 90% tarasowanych gruntów.

Niektóre gospodarstwa praktykują rolnictwo ekologiczne: międrzędowe rośliny strączkowe, żywopłoty z TTES nr 18, zioła kulinarne dla bioróżnorodności.

Organoleptic Profile

Zbite granulki ∅5–8 mm, ciemnooliwkowe ze stalowym połyskiem.

Prażenie, suszone owoce (śliwki, morele), głęboka mineralność nagrzanego kamienia → jaśminowy miód, kasztanowy krem, wanilia.

Złocistożółty po głęboko bursztynowy (topazowy).

Skręt podłużny, ciemnobrązowy z oliwkowymi i bordowymi przebłyskami.

Prażenie, palony cukier, suszone owoce, lekka mineralność → karmel, pieczone owoce, orchidea/gardenia.

Bursztynowy, złocistokasztanowy.

Spent Leaves: Ciemnozielone całe liście z czerwonobrązowymi brzegami.

Taste: Gęsty, oleisty, zrównoważony. Miód, wypieki, prażone orzechy, mineralność. Finisz długi, lekko słodki, z delikatną goryczką. Łagodniejszy i bardziej okrągły niż Wuyi Oolong.

Chemical Composition

Amino Acids: L-teanina ~1,84% (Wuyi Oolong); ~3% wolnych aminokwasów (Shui Xian). Słodycz, umami, relaksacja.

~25 mg/g (Wuyi Oolong); ~2% (Shui Xian). Umiarkowane pobudzenie.

~12% (Shui Xian) – efekt prebiotyczny.

Essential Oils: Linalol, nerol, geraniol, octan benzylu, salicylan metylu. Unikalny marker kultywaru Wuyi – terpenowy lakton wuyenolid C. Pirazyny i furfural (produkty reakcji Maillarda podczas prażenia).

Minerals: Potas, mangan (podwyższony z powodu czerwonych gleb – ~150 mg/100 g), magnez, żelazo, fluor.

Polyphenols: ~22–23% suchej masy. EGCG, teaflawiny (produkty enzymatycznego utleniania).

Health Notes

Katechiny (EGCG) + teaflawiny.

Obniżenie LDL.

Hamowanie α-amylazy.

Taniny stymulują soki trawienne; polisacharydy – prebiotyk.

L-teanina + kofeina – koncentracja bez pobudzenia.

Profilaktyka próchnicy (hamowanie Streptococcus mutans).

Mangan, fluor.

Storage

Container: Hermetyczne, nieprzezroczyste (blacha, ceramika, worek foliowany). Próżnia lub atmosfera azotu – zaleta.

Shelf Life: Do 24 miesięcy. Prażone oolongi są stabilniejsze od jasnych. W przypadku Wuyi Oolong możliwe jest okresowe powtórne prażenie (每年覆焙) dla podtrzymania świeżości.

+5…+25°C, wilgotność <55%, z dala od zapachów i światła.

Kolekcjonerzy starzają latami; egzemplarz z 1958 roku sprzedano na aukcji za rekordową sumę.

Comparison

Z kultywaru Qing Xin; bardziej orzechowy i karmelowy, mniej mineralny.

Z kultywaru Tieguanyin; bardziej korzenny, gęsty.

Wysokogórski jasny oolong; zasadniczo inny – świeży, kwiatowy, bez prażenia.

Kontynentalne oryginały; bardziej wyrazista „岩韻” (skalna melodia), bardziej dymny charakter. Wersje tajwańskie są łagodniejsze, z wyraźniejszymi nutami kwiatowymi.
