Category: 圓炒青 (yuán chǎoqīng) — 「圓形炒製」綠茶，有別於長炒青 (cháng chǎoqīng)，即係嗰種用嚟製作眉茶 (méichá, Chunmee)、茶葉形狀「似眉」嘅「長條炒製」綠茶。如果話 méichá 係捻成幼細彎曲嘅條狀，咁 zhūchá 就係搓成緊實嘅球狀 — 珠 (zhū) 意思係「珍珠」。

歷史上，平水與其話係單一茶園，不如話係一個大型嘅貿易同加工集散地 — 嚟自省內丘陵地帶各縣嘅綠茶毛茶都會匯聚到呢度，喺度加工到符合出口規格，並製成標誌性嘅「珍珠」外形。正係因為咁，呢個商品名就固定落嚟代表成個類別 — 平水珠茶，係以市場中心命名，而唔係以某個特定茶園命名。
Origin: 浙江省 (浙江) 北部紹興市 (紹興) 周邊嘅平水 (平水) 地區。
Type: 綠茶（炒青綠茶 — 炒製嘅綠茶）。
落少啲茶葉就可以，份量會比睇落嘅體積少 — 因為顆粒好重身而且會展開 — 再用熱水但唔係大滾嘅水去沖泡，隨住「珍珠」慢慢展開而增加浸泡時間。
用較多茶葉，加入滾水同糖，頭一浸短時間嘅茶湯通常會倒咗佢唔要。
