Zhengqing Jiancha

Classification and Origin

Category: unlike meechi and 珠茶, aimed at North and West Africa, and unlike jasmine bases for the domestic market, jiancha is a typical export OEM product: it is made not under the producer's own "name", but according to the technical requirements of a Japanese importer, who subsequently finishes, blends, and packs the tea under their own brands.

Chinese green tea for wholesale export is traditionally built around three axes of fixation (杀青, shāqīng). The overwhelming part of the gross product is chǎoqīng 炒青 (fixation by pan-firing), yielding meechi and pearl-shaped gunpowder. A separate branch is hōngqīng 烘青 (hot-air fixation), the base for jasmine teas. Zhengqing jiancha stands apart: it is zhēngqīng 蒸青 — steam fixation, which in current exports occupies a narrow, specialized niche, tailored for a single market — Japan.

Origin: factories in the provinces of Zhejiang (浙), Fujian (闽), Jiangxi (赣), Hubei (鄂).

Type: green tea of steam fixation (zhēngqīng 蒸青).

Botany and Raw Material

for the steam style, raw material is selected differently than for classic pan-firing. The Japanese market values a saturated green infusion color, "herbaceous-marine" freshness, and a heavy body. Therefore, tender, succulent, relatively early leaf with a high proportion of chlorophyll and amino acids goes into production.

coarse, overgrown leaf with high fiber content yields a flat, "hay-like" profile, undesirable for the sencha style.

bush management and plucking schedules are adjusted to the target specification — the higher the required grade, the more tender the flush.

Organoleptic Profile

Taste: — thick, juicy-green, with a balance of soft freshness and moderate astringency; aftertaste is clean, "green".

Price and Authenticity

jiancha lacks a chestnut-firing aroma; the infusion is brighter green, the spent leaf is evenly green, the leaf is straight-needle-shaped, not twisted into an "eyebrow" or "pearl".

jiancha is not scented with flower and retains a "marine" green freshness, not a floral profile.
